Delectable Healthy Gluten-Free Recipes Using Shirataki Noodles

Rice Pearls, Apple & Berry Breakfast
Ingredients
100g Superlite Rice Pearls
1 apple, grated
cinnamon, to taste
2 tbsp Goji Berries / any berries of choice
1 tbsp seeds / nuts
coconut oil (optional)
Method
Another breakfast favourite! Rinse and drain 100g of Superlite Pearls. Grate an apple and add the rice pearls and apple to a hot pan. No oil needed, but coconut oil adds a delicious flavour. Cook rice pearls and grated apple for a few minutes, and add goji berries/fresh berries, cinnamon, seed and nuts. For those that want to add some honey, or organic soya milk, that works too.
* make sure to put your left-over rice pearls in a bowl and cover with water, put a lid on and store in the fridge. Use within 3 days *

 

Cream Cheese & Basil Pesto Fettuccine

Serves 1

This delicious meal is so easy, you can even whip up at work. All you need is 5 minutes and 3 ingredients, and you can sit down to a very filling, healthy and hearty lunch.

Ingredients

1 bag Superlite Fettuccine noodles
2 tablespoons low fat cream cheese
1 tablespoon basil pest
salt and pepper

Directions

Rinse and drain Superlite Noodles. Add to a bowl and heat in the microwave (or if you are at home, heat in a pan). Once heated, add cream cheese and basil pesto and mix it through the noodles. Add some salt and pepper and enjoy!
