10 Dec Easy Scrambled Tofu Breakfast Wrap
Makes 2
Ingredients
- 1 block silken tofu
- 1 onion sliced
- 1 cup sliced mushrooms
- 2 handfuls baby spinach
- Salt
- 2 wraps
Method
- Slice up the onion and mushrooms and fry in a pan until cooked. Add in the spinach and cook together.
- Fry the tofu and a pinch of salt and scramble the tofu while you fry.
- Add this all into a wrap and enjoy it. You can add in some lovely extra ingredients like tomatoes and avo into this but I thought we would keep this one super simple.
