18 Jan LOVE AND GOOD FORTUNE COOKIES

What better way to do that than by coming together to create a delicious homemade treat? Our fortune cookie recipe is perfect for that. We have included both a traditional and a vegan recipe, so everyone can join in on the fun.. Not only will you be creating a delicious treat, but you’ll also be adding a touch of good luck and fortune to your relationship. It’s a simple yet thoughtful way to show your love and appreciation for one another. So gather your ingredients and let’s start baking!
Traditional Fortune Cookies:
Ingredients
- 3 large egg whites
- 3/4 cup sugar
- 1/2 cup butter
- 1/4 tsp vanilla extract
- 1/4 tsp almond extract
- 3 tbsp water
- 1 cup all purpose flour
METHOD
- Preheat the oven to 190 degrees celcius. Line a sheet pan with parchment paper or a silicone mat, and have your fortune strips ready to go.
- In a stand mixer (or large bowl with a hand mixer), whip the egg whites and sugar on high speed for about 2 minutes, until frothy. Whip in the melted butter, vanilla, almond extract, and water until incorporated. Add the flour and mix until the flour just disappears.
- With a tablespoon measure, spoon the batter onto the parchment paper and spread it out into an even 7cm circle. I recommend not doing any more than 2-3 at a time, since they set very quickly and you will not be able to fold more than that.
- Bake the fortune cookies for 7-8 minutes, until the edges brown slightly. If you let them brown too much, they will snap when you shape them. Conversely, if they don’t brown a little bit, they will also break (but tear, rather than snapping).
- When each batch of fortune cookies finishes baking, remove them from the oven and quickly flip the circle over, and fold your fortune cookie in half, into a semicircle. This is when you slip your note into the cookie (quickly) because if you slip it in right at the beginning, the cookie will be too hot and your paper will stick to the cookie. Place your semicircle onto the edge of a cup, and quickly fold the ends down, to crimp into a fortune cookie shape.
- Place the cookie in a muffin tin to let it cool and hold its shape.
- Repeat with the remaining batter and enjoy!
Vegan Fortune Cookies:
Ingredients
- 6 Tbsp Aquafaba Chilled
- ½ tsp Vanilla
- ½ tsp Almond Extract
- 60 g (½ cup) All Purpose Flour
- 50 g (¼ cup) Sugar
- ½ tsp Salt
- 2 Tbsp Plant-Based Butter Melted
Method
- Preheat oven to 200C. In a medium bowl, beat together aquafaba, vanilla and almond extract with a hand mixer or whisk until frothy. Sift in the flour, sugar and salt and fold together with a spatula until just combined – don’t overmix the batter. Fold in your melted butter If the batter is too thick, add a teaspoon of water at a time until it is the consistency of runny pancake batter.
- On a greased cookie sheet or silicone mat, add a tablespoon of batter and spread it with the back of the measuring spoon until it is approximately a 7cm circle. Get the batter as even as possible.
- Bake 2-3 cookies at a time, starting at 5 minutes. If the edges are not golden brown, check on them every 30 seconds until they are.
- Once golden brown around the edges, remove from the oven and immediately flip the circles over with a spatula. Place your fortune across the middle and fold in half with the spatula.
- Use the spatula to remove the folded cookie from the pan and fold again over the rim of a drinking glass. Then place the cookie in a cupcake pan to hold its shape. ** It helps a lot to wear gloves on this step – these cookies are hot!!**
- Repeat the baking process until all cookies are made. Reset your oven to cool down to 225F. Once your oven is 225F, place the cookies (all still in the cupcake tin) in the oven for 10-15 minutes. This allows them to get crispy without burning.
- Keep the cookies in the cupcake tin until cool and enjoy!
