INGREDIENTS
- Tabu Soba Noodles
- Clearspring Organic Japanese Hatcho Miso
- Kallo The Chicken Stock Cube OR Sally Ann Creed Vegan ‘Chicken’ Stock Powder
- Clearspring Japanese Toasted Sushi Nori
- Natura Dark Demerara Sugar
- Truefoods Cold Pressed Sesame oil
- Faithful to Nature Sesame Seeds
- Clearspring Organic Japanese Shoyu Soya Sauce
- Free-range chicken breast OR tofu
- Red onion
- Rice vinegar
- Bonito flakes (optional, leave out for vegans)
- Dashi powder (optional, leave out for vegans)
- Chili flakes
- Bio Italia Organic Corn
- Baby Bok Choi
- Japanese mayo (Kewpie) OR Martinnaise Original Vegan Mayonnaise
- Pickled ginger
METHOD
- Boil a kettle of water (2 litres) and dissolve your chicken stock/veg stock
- Add a tablespoon of miso paste to the stock and simmer slowly
- Add a tablespoon of dashi granules (optional), a tablespoon of Demara sugar, a touch of salt, 2 tablespoons soya sauce, and add a teaspoon of Bonita flakes (optional) for a smoky taste. Allow to simmer for 30 mins before adding your trimmed baby bok choi leaves and to poach.
- Thinly slice your red onion and add them to half a cup of rice vinegar to allow them to pickle.
- Slow-roast your chicken breast with some salt and garlic and chili flakes. Once cooked (about 45 mins), roughly pull the breast with a fork. ALTERNATIVELY, cube your tofu and pan fry your in coconut oil, garlic and chili paste
- Bring a pot of water to a boil- cook your noodles (according to Soba noodle package)
- In a bowl, add your noodles and broth
- Top with the pulled chicken or tofu, charred corn, sesame seeds, and pickled red onion.
- Add a teaspoon of soya sauce, a touch of Japanese Mayo, and tear some nori sheets into triangles to place on top.
- Finish with a dash of sesame oil.
