Summer Tomato Pasta

This Tomato Pasta with Burrata and Basil is the perfect dish for warm summer nights—it’s fresh, light, and bursting with flavour. With just a handful of ingredients and ready under 30 minutes, you’ll have a crowd-pleasing meal that’s as satisfying as it is easy to make.

Yields: 4 Servings

Ingredients:

2 tbsp FtN Olive Oil

2 Shallots, finely sliced (can also use red onion)

2 large Garlic cloves, sliced

4 large Tomatoes, cubed

Salt and Pepper

4 cups Knysna Grain Mill Pasta, cooked

1 Burrata

3 tbsp Fresh Basil

¼ cup FtN Pine Nuts, toasted

Method:

  1. Slice the shallots, garlic, and tomatoes into chunks. 
  2. Heat the olive oil over medium heat, then add in the shallots and sauté for 5 minutes until they are softened. Add the garlic, tomato, and a pinch of salt and pepper, and turn the heat down to low, let the tomato cook slowly for 20 minutes. 
  3. Cook the pasta according to the package instructions. Toss the cooked pasta into the sauce with a few tablespoons of the pasta water. 
  4. Serve in a large bowl with the burrata ball, a sprinkle of basil, toasted pine nuts and a drizzle of olive oil.
