This Tomato Pasta with Burrata and Basil is the perfect dish for warm summer nights—it’s fresh, light, and bursting with flavour. With just a handful of ingredients and ready under 30 minutes, you’ll have a crowd-pleasing meal that’s as satisfying as it is easy to make.

Yields: 4 Servings
Ingredients:
2 tbsp FtN Olive Oil
2 Shallots, finely sliced (can also use red onion)
2 large Garlic cloves, sliced
4 large Tomatoes, cubed
4 cups Knysna Grain Mill Pasta, cooked
1 Burrata
3 tbsp Fresh Basil
¼ cup FtN Pine Nuts, toasted
Method:
- Slice the shallots, garlic, and tomatoes into chunks.
- Heat the olive oil over medium heat, then add in the shallots and sauté for 5 minutes until they are softened. Add the garlic, tomato, and a pinch of salt and pepper, and turn the heat down to low, let the tomato cook slowly for 20 minutes.
- Cook the pasta according to the package instructions. Toss the cooked pasta into the sauce with a few tablespoons of the pasta water.
- Serve in a large bowl with the burrata ball, a sprinkle of basil, toasted pine nuts and a drizzle of olive oil.
