If the chilly weather has got you in the mood for something sweet but not too sinful, you’re in luck. We’ve put together a selection of delectable and slightly unusual Banting desserts you can make at home. Have fun with these creative combinations, and enjoy the oh-so-tasty results!
Dairy-Free Olive Oil Ice Cream
Ingredients:
- 1 can full fat coconut milk or coconut cream
- 3 free-range egg yolks
- 2/3 cup high quality extra virgin olive oil
- ⅓ cup raw honey
- ½tsp vanilla extract
- ¼tsp Himalayan salt
Method:
- Heat the coconut milk on medium-low heat, stirring frequently, until hot & steaming but NOT simmering.
- Place the egg yolks in a heat-safe container; add a ladle full of hot coconut milk to the yolks & stir.
- Add the tempered yolks to the rest of the coconut milk in the saucepan, stirring constantly.
- Heat the mixture on medium-low, stirring constantly for about 6-8 minutes until you have a thick custard. Do not let the mixture simmer or boil.
- Remove from heat & pour into a bowl to cool to room temperature.
- Add the rest of the ingredients; whisk or mix together in a blender until incorporated.
- Chill the custard in the fridge until cold.
- Place the chilled custard in your ice cream maker & follow the manufacturer’s instructions.
- Pour into a freezer-safe container & freeze for 1-4 hours to harden before serving. Dish up & enjoy!
Chocolate Cayenne Brownies
Ingredients:
- 1 cup almond flour
- ½ cup cocoa powder
- 3Tbsp xylitol
- 1tsp baking powder
- ½tsp bicarb
- ½tsp cayenne pepper
- 3 free-range eggs
- 100ml cream
- 60ml melted butter
Method:
- Preheat the oven to 180 degrees C.
- Mix together the flour, cocoa, xylitol, baking powder, bicarb & cayenne pepper in a large bowl.
- Stir in the wet ingredients until you have a smooth, thick batter.
- Spoon the mixture into cupcake cases & bake for 10-12 minutes.
- Cool on a wire rack, serve & enjoy!
Sweet Potato Chocolate Cake
Ingredients:
- 50g dark organic chocolate
- Pinch of Himalayan salt
- 3Tbsp cream
- ½cup xylitol
- 3 free-range eggs
- 100ml coconut oil, melted
- 100ml olive oil
- 2Tbsp raw honey
- 1 cup sweet potato, cooked & mashed
- 3Tbsp cocoa powder
- 1tsp bicarb
- 1tsp baking powder
- 1 cup flax meal
Method:
- Heat the oven to 150 degrees C.
- Combine the cream, salt & chocolate in a saucepan; melt over a low heat.
- In a separate bowl, beat together the xylitol, eggs, coconut oil, olive oil & honey for about 2 minutes, until combined.
- Add the sweet potato & beat until smooth. Then stir in the melted chocolate mixture.
- Slowly add the cocoa, bicarb, baking powder & flax meal; mix until smooth.
- Pour into a cake tin or mould, lightly greased with some coconut oil.
- Bake for 40 minutes.
- Leave the cake to cool, then top with more melted chocolate or with a sour cream frosting. Slice, serve & enjoy!
