27 Sep Vegan Ice-Cream In Three Classic Flavours
Chocolate, strawberry, vanilla, whatever may come, these are the classic flavours we chose from as kids – unless of course there was a zany bubblegum flavour in blue. They’re classic because some things can’t really be improved on! Here are some delicious, healthy vegan ice-cream recipes in classic flavours for you to enjoy this summer.
Vegan Vanilla Ice-Cream
Ingredients
• 1 cup raw cashews
• 2 cups water
• ¼ cup agave nectar
• 1 tablespoon vanilla extract
• 1 pinch sea salt
How to:
• Blend all the ingredients together in a blender on high speed
• Pour mixture into an ice-cream maker and follow the instructions for using the ice-cream maker

Fudgy Cocao Avo Ice-Cream
Ingredients
• 1 avocado, peeled and pitted
• 1 can full-fat chilled coconut milk
• ½ cup cocoa
• ½ cup agave nectar
• 1 tablespoon vanilla extract
How to:
• Scoop the thick coconut cream in the coconut milk can into a bowl, keeping as much as the runny liquid out as you can
• Using a mixer or hand held whisk, beat, starting slow then increasing to medium speed until soft peaks become visible, about 5 minutes. Set aside
• Add the remaining ingredients to a food processor, including the remaining liquid of the coconut milk (avocado, cocoa, agave, vanilla) and blend until smooth and creamy
• Using a spatula, fold the coconut whipped cream into the cocoa-avocado mixture
• Chill in the refrigerator for at least 2 hours
• Pour the mixture into an ice-cream maker and freeze according to instructions

Strawberry Coconut Ice-Cream
Ingredients
• 2 cans coconut milk
• 1 cup of fresh strawberries, diced
• zest from 1 orange
How to:
• Drain the liquid from the coconut milk and add the solids to a sauce pan
• Heat the milk over medium heat, stirring occasionally, until bubbles begin to appear
• Remove from heat, pour into a large bowl and chill in fridge for 6 hours
• Chop the strawberries and place in fridge to chill too
• Once cooled, pour the coconut milk into an ice-cream maker and freeze according to directions
• In the last 5 minutes of churning add the strawberries and orange zest
• Remove ice-cream from the ice-cream maker, give it a good stir to mix in strawberries and zest
• Freeze for another hour or until you serve it
