25 May Vegan Mac ‘n ‘Cheese’
Ingredients
- 120g macaroni, boiled to pack instructions
- 1/4 brown onion, sliced
- 1 Tbsp olive oil
- 70g sweet potato, peeled and boiled
- 70g butternut, peeled and boiled
- 1 Tbsp nutritional yeast
- ½ tsp turmeric
- ¼ tsp smoked paprika or spice mix
- 2 tsp soy/tamari sauce
- ½ tsp garlic powder/1 clove fresh garlic
- ⅓ cup coconut milk
- Salt and pepper
Cashew parmesan
- 3 Tbsp roasted cashews
- 1 Tbsp nutritional yeast
- 2 Tbsp bread crumbs
- 1 Tbsp olive oil
- Salt
Method
- Fry the onion with oil until translucent
- Throw all ingredients into a blender and blend until smooth
- Pour over the cooked pasta and place in an oven dish
- For the parmesan, place the cashews, breadcrumbs, nutritional yeast, salt and oil in a food processor or roughly chop to combine. You do not want this to be too fine.
- Top the mac n cheese with parmesan and place under the grill for 5 – 8 minutes.
- Serve with fresh basil and voila
